Potato Leek Soup
Entree Ingredients (Two Servings)
Potato Leek soup mix (Mayacamas brand)
2 ½ cups water
Dash of lemon juice
1/8 cup of chopped red onion
½ stalk of celery, chopped
½ large russet potato, cubed
1 TB oil
1-2 TB Earth Balance
½ of a vegetable bouillon cube
Cook chopped onions and celery in oil until onion is translucent.
Add 2 cups water to pot and add cubed potatoes. Cook for 4 min.
In a separate bowl, combine one package Potato Leek soup mix, add ½ cup water and blend.
Combine this mixture in the pot with the rest of the ingredients.
Stir to blend.
Finish with adding bouillon, 2 TB. butter, a squeeze of fresh lemon juice to taste.
Cook until potato cubes are soft, approx. 5-10 more minutes.
Add some lightly steamed carrots and/or broccoli to soup.
Cool and refrigerate.
Serve with blue corn chips and salsa, or toast.
