Polenta Pizza with Pesto Sauce


Entree Ingredients (Two Servings)

      box Fantastic Foods Polenta
     1 cup water
     1 TB earth balance
     seasoning to taste
     Steamed Carrots and Asparagus
     Grated cheddar cheese for garnish
     Fresh Pesto sauce, green or red
     1TB Earth Balance
      tsp. lemon juice
     1tsp. water
     1 TB no-chicken powder
      pesto sauce

Preparation

Add Polenta mix to cold water and earth balance and bring to simmer. Cook until thick. Pour into small flat greased dish and let cool. Cut into 6 serving pieces. Add tsp pesto sauce to each slice of polenta and spread. Sprinkle with grated cheddar cheese. Steam carrots and asparagus.

Pesto Butter-Lemon Sauce

Combine Earth Balance, lemon juice, water and no-chicken powder and heat to blend. Stir well.

Serve

Arrange polenta and vegetables on serving plate.
Drizzle Pesto Butter-Lemon sauce over vegetables.
Serve with extra sauce.
