Polenta Pizza with Pesto Sauce
Entree Ingredients (Two Servings)
½ box Fantastic Foods Polenta
Add Polenta mix to cold water and earth balance and bring to simmer. Cook until thick. Pour into small flat greased dish and let cool. Cut into 6 serving pieces. Add ½ tsp pesto sauce to each slice of polenta and spread. Sprinkle with grated cheddar cheese. Steam carrots and asparagus.
Pesto Butter-Lemon Sauce
Combine Earth Balance, lemon juice, water and no-chicken powder and heat to blend. Stir well.
Arrange polenta and vegetables on serving plate.
